SUBSTITUTIONS AND VARIATIONS
- Fillings. Quesadillas can be filled with almost any filling you can think of. Beef, chicken, pork, turkey, fish, shrimp, vegetables, etc. Two of my favorite cores are: Breaded shrimp (Battered Fried Shrimp) and Devil crab (Mexican Deviled Shrimp) when I’m in the mood for shrimp quesadillas with a twist.
- Use different spices. Play around with different seasonings in place of (or in combination with) chili powder and garlic powder, such as taco seasoning.
- Use different cheeses. Use Monterey Jack, Pepper Jack, Gouda, or extra sharp Cheddar.
- Add additional vegetables. Savory ideas like mushrooms, corn, tomatoes, and zucchini work well and are delicious in quesadillas.
