Ingredients
- lentil – One cup of dry lentils is more than enough for this soup, a little too much.
- Sausages – Although optional, the sausage adds a delicious flavor that I find irresistible in a lentil soup.
- Ham – Bacon adds a smoky rustic element that is perfect here but optional to add.
- Potato and carrots – Adding potatoes and carrots not only adds flavor and texture, but also makes it a fuller dish.
- Garlic puree – I always have garlic puree available, but you can also use minced garlic.
- Seasoning – Use sazon wrapper not only for added flavor but also for a nice bright color.
- Chicken bouillon powder – Chicken stock doesn’t just add flavor, it adds a salty element, so be careful when adding salt.
- musket – Cilantro adds a delicious, unique fresh flavor that is a must in my book. If you’re not a fan of cilantro, just leave it out of the recipe. Note: If you can find cilantro leaves in your area, rinse and chop two leaves and add them as well. Absolutely delicious!

Substitutions and Variations
- Sausages – I used ground mild sausage, but feel free to use whatever you like. Ground sausage, chunks, or small cubes work great in this soup. Another favorite sausage here is andouille.
- musket – If you don’t like cilantro, leave it out of the recipe, otherwise fresh cilantro complements this delicious soup.
- Taste – If you can find cilantro leaves, use one to two rinsed chopped leaves.
- Vegetables – I’ve added onions and carrots, but I also like kale, celery, and zucchini. Add vegetables you like. Most vegetables work well in this soup.
Instructions:
Step 1: In a large pot over medium heat, add the sausage. Using a spatula or potato masher, chop and cook until the sausage begins to brown.
Step 2: Wash the dry lentils with a colander under hot water. Set aside until ready to use.
Step 3: Add the onion and ham (if using) and cook until the onion is slightly translucent.
Step 4: Add the potatoes, carrots, garlic puree, saison, chicken stock, cumin and lentils. Mix.
Step 5: Add cilantro, water, salt, pepper to taste and stir. Bring to a boil, reduce heat slightly and cover. Cook for 25-30 minutes until the lentils are tender.
Step 6: Taste the soup for salt and add more if needed. Serve in bowls with crusty bread or a side of white rice.
